Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh lapisan lidah buaya dengan menambahkan CMS dengan dosis berbeda terhadap daya simpan cabai rawit pada suhu rendah. Penelitian ini dilaksanakan di Laboratorium Teknologi Hasil Pertanian Universitas Teknologi Sulawesi yang berlangsung dari bulan Juli sampai bulan Agustus 2024. Penelitian dilaksanakan menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari 4 taraf yaitu A0: sebagai Kontrol; A1: Carboxyil Methyl Cellulose (CMC) 0,5%; A2: Carboxyil Methyl Cellulose (CMC) 1%; A3 = Carboxyil Methyl Cellulose (CMC) 1,5% Perlakuan masing-masing diulang sebanyak 3 kali sehingga terdapat 12 unit percobaan, setiap unit percobaan terdiri dari 8 polybag. Sidik ragam (ANOVA) dengan uji lanjut Beda Nyata Terkecil (BNT). Hasil penelitian perlakuan terbaik dalam aplikasi edible coating berbahan dasar lidah buaya dengan penambahan Carboxy Methyl Cellulose (CMC) yang berbeda yaitu pada perlakuan R3 konsentrasi CMC 37 gram. Dimana hasil analisis seteleah 12 HSP pada parameter susut bobot yaitu 9.81, parameter vitamin C 4.76, parameter warna 44.36, parameter kecerahan 61.60 dan parameter kerusakan 11.33.
