Pemanfaatan Limbah Kulit Kakao Sebagai Bahan Baku Pangan: Inovasi Pengabdian Masyarakat di Sekolah Sebagai Upaya Meningkatkan Nilai Ekonomi dan Lingkungan

Kabupaten Luwu merupakan salah satu sentra perkebunan kakao di Sulawesi Selatan yang menghasilkan potensi limbah kulit kakao sangat besar. Sekitar 70–80% bagian buah kakao berupa kulit terbuang dan sering dibiarkan menumpuk, sehingga berpotensi menimbulkan pencemaran lingkungan. Padahal, kulit kakao mengandung serat pangan, antioksidan, dan senyawa bioaktif yang dapat diolah menjadi bahan baku pangan bernilai tambah. Pengabdian kepada masyarakat ini bertujuan untuk memberikan pemahaman dan pelatihan kepada siswa dan guru UPT SMA Negeri 4 Kabupaten Luwu dalam memanfaatkan limbah kulit kakao sebagai bahan pangan inovatif guna meningkatkan nilai ekonomi dan kesadaran lingkungan. Kegiatan dilaksanakan pada tanggal 27 Januari 2026 melalui pendekatan penyuluhan interaktif, demonstrasi, dan praktik langsung pengolahan kulit kakao menjadi produk pangan sederhana. Hasil pelaksanaan menunjukkan terjadinya peningkatan pengetahuan peserta mengenai potensi gizi dan nilai ekonomis kulit kakao, peningkatan keterampilan praktis dalam tahap pengolahan (pembersihan, pengeringan, penghalusan, hingga pembentukan produk), serta tumbuhnya kesadaran lingkungan dan minat kewirausahaan berbasis potensi lokal. Respons positif dari pihak sekolah dan antusiasme siswa menandakan keberhasilan program ini sebagai model pengabdian masyarakat berbasis sekolah yang mengintegrasikan aspek pendidikan, ekonomi kreatif, dan keberlanjutan lingkungan. Kegiatan ini direkomendasikan untuk dikembangkan lebih lanjut melalui penambahan durasi praktik, penyediaan peralatan yang memadai, serta integrasi ke dalam program ekstrakurikuler atau pembelajaran kewirausahaan di sekolah.
